Banana Oat Pancakes

Made THESE pancakes this morning and it was delicious! Modified the recipe slightly (from katheats) and I ate it alongside a grapefruit!

Recipe:

1/3 cup rolled oats (or quick oats) (I used Bob’s Red Mill Extra Thick Rolled Oats) (~125 cals)*

1/3 cup egg whites (I used Egg Beaters) (~44 cals)**

1/2 mashed medium banana (~54 cals)

1 packet stevia/other 0 cal sweetener (optional)

cinnamon to taste

1/2 tsp baking powder

1/2 tsp vanilla extract

*For rolled oats you will want to soak them in the egg whites for at least 15 minutes – or overnight in the fridge

**You can use a whole egg, but I don’t think the pancake comes out as well, but it DOES work. Or real egg whites, but you’d probably need 2-3 eggs’ worth

  1. Mix together oats and egg whites with baking powder, vanilla extract and cinnamon in a bowl. Add 1/2 mashed banana.
  2. Preheat a skillet, spray with non-stick spray, and pour your batter in while shaping it into a large disc “pancake” with a spoon. (I made two large pancakes)
  3. When you can shake it around in the pan, it’s time to flip.
  4. Top with toppings of choice

Makes 2 large pancakes or 1 ginormous one (I recommend making 2). Tot cals: 223

Mango Strawberry Green Monster Smoothie

Had a yummy smoothie this morning! (The actual amount was double that in the picture, I just snapped a pic when I was half way done drinking it!)

In the smoothie was:

1 cup Unsweetened Vanilla Almond Breeze (Almond Milk)

2 handfuls of raw baby spinach

1 mango (it was super sweet!)

1/4 cup of frozen strawberries

Now I feel energized and ready to get on with the day!

Breakfast

is the most important meal of the day! So I fueled up with a grapefruit and a bowl of Chocolatey Oatmeal (1 serving oats with Almond Milk, Peanut Butter, Cocoa Powder, Stevia, Cinnamon, and Vanilla extract). YUM. Eating a filling, balanced breakfast can prevent unhealthy snacking later in the day. Have a healthy day!
